I have to admit I overindulged over the holidays and now it’s time to get back to my low-carb diet. Fortunately, going low-carb doesn’t mean you have to give up all your favorite foods.
For instance, one of my favorite breakfast foods is waffles. And I found a fabulous low-carb waffle recipe that has just 4 ingredients. That’s right – 4 simple ingredients!
What’s more, these waffles don’t contain any flour. Not even almond or coconut flour.
The main ingredients in these waffles are eggs and a nut or seed butter of your choice. When I first heard that, I thought it might make the waffles taste too nutty or eggy – and I thought they’d be soggy. But the two ingredients neutralize each other nicely.
And the texture is perfect!
The only other ingredients you’ll need are gluten-free baking powder and a sweetener. I prefer Stevia, but you can use erythritol or anything else to give them a slight sweetness.
Here’s how much you’ll need of each ingredient:
• 4 large eggs
• 1/2 cup nut or seed butter (almond, sunflower seed, pumpkin seed, peanut, etc.)
• 1/2 tsp gluten-free baking powder (make sure it doesn’t have any starch in the ingredients)
• 1 tbsp powdered Stevia (or any sweetener of choice)
Mix all of the ingredients together in a food processor or blender. You can also use a bowl with a hand mixer. Blend until smooth and then let it sit until the bubbles in the batter settle.
Preheat your waffle iron and apply a thin coat of healthy oil (such as avocado or coconut oil). Apply a little oil after each waffle.
This recipe makes 2 large Belgian waffles. So it’s perfect for one big meal or two smaller meals. Here are a few notes to personalize this recipe.
• I prefer creamy almond butter for my waffles, but you can use chunky. Whatever nut/seed butter you use, make sure it’s all-natural, no sugar added. And if you use unsalted nut butter, you’ll want to add a pinch of sea salt to the recipe.
• I love butter, so I add a tablespoon or two to the recipe before I blend it. The butter makes the waffles rich and moist. Try this if your waffles are too dry for your taste.
• Feel free to add some cinnamon to the recipe if you want. Start with a pinch and adjust to taste.
• I’ve heard that using a mini waffle maker works better for these waffles. But I love my Belgians.
• If you want to add a little fiber to the waffles, try a little flax or oat bran.
Once the waffles are cooked to your liking, feel free to top them with some extra butter, along with smashed strawberries or blueberries. Next week, I’ll tell you about another topping you can enjoy with your waffles.
